When looking for a hearty meal, look no further than this dish. It’s full of vegetables, earthy lentils, and garlicy kielbasa sausage, simmered in chicken broth and scented with rosemary.

This recipe can easily be adapted to make it vegetarian, just swap the chicken broth for vegetable broth, and substitute the sausage for smoked tofu or vegetarian kielbasa, Tofurky brand.

Ingredient List

•  2 tablespoons vegetable oil

•  1 yellow onion (thinly sliced)

•  2 garlic cloves (minced)

•  Minced fresh flat-leaf parsley, for serving.

•  1 small cabbage, any color you prefer – enough for roughly 4 cups (thinly sliced)

•  4 celery stalks (thinly sliced)

•  4 carrots (peeled and thinly sliced)

•  1 teaspoon dried rosemary

•  Coarse salt and freshly ground pepper

•  2/3 cup dry white wine or apple juice

•  4 cups chicken broth

•  12 oz Polish kielbasa (cute into bite-sized pieces)

•  1 cup dried lentils (rinsed and soaked overnight)*

*To help facilitate a quicker cook time, be sure to presoak your lentils. Alternately, you can use pre-cooked, ready to eat lentils that come in a pouch.
